• 4 eggs • 150 g sugar • 125 g of butter • 120 g flour • 1 vanilla pod • ½ liter warm milk • 2 cups crystallized sugar • 250 g sour cherries. Preheat oven to 160 °. Melt the butter in a small saucepan. Warm the milk by adding the seeds and the vanilla bean and let it infuse. Separate the yolks from the whites and turn the whites into firm snow. In another container blanch the egg yolks with the sugar. Add butter while continuing to whisk to obtain a homogeneous mixture. Add the flour, gradually stirring with the vanilla milk lukewarm and then add the whites until stiff. Butter a mussel or gratin dish with high edges and spread the pitted cherries in the bottom. Cover with the dough and sprinkle lightly with a tablespoon of granulated sugar.
