Onion and Tomato Jam

This savory-sweet jam combines slowly cooked onions and tomatoes with vinegar, sugar, and warming spices. Serve it with pizza, sandwiches, burgers, grilled vegetables, cheese, or toasted bread.

Ingredients

  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 4 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • Pinch of red pepper flakes, optional

Method

  1. Warm the olive oil in a heavy saucepan over medium-low heat. Add the onions and cook, stirring occasionally, until soft and golden.
  2. Add the garlic and cook briefly until fragrant.
  3. Stir in the tomatoes, brown sugar, vinegar, salt, black pepper, paprika, and optional red pepper flakes.
  4. Bring the mixture to a gentle simmer. Cook uncovered over low heat, stirring regularly, until thick, glossy, and jam-like, about 35 to 50 minutes.
  5. Taste and adjust the salt, sweetness, or acidity as needed.
  6. Let the jam cool before transferring it to a clean container.
