Onion and Tomato Jam
This savory-sweet jam combines slowly cooked onions and tomatoes with vinegar, sugar, and warming spices. Serve it with pizza, sandwiches, burgers, grilled vegetables, cheese, or toasted bread.
Ingredients
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 ripe tomatoes, diced
- 2 cloves garlic, minced
- 1/3 cup brown sugar
- 1/4 cup apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- Pinch of red pepper flakes, optional
Method
- Warm the olive oil in a heavy saucepan over medium-low heat. Add the onions and cook, stirring occasionally, until soft and golden.
- Add the garlic and cook briefly until fragrant.
- Stir in the tomatoes, brown sugar, vinegar, salt, black pepper, paprika, and optional red pepper flakes.
- Bring the mixture to a gentle simmer. Cook uncovered over low heat, stirring regularly, until thick, glossy, and jam-like, about 35 to 50 minutes.
- Taste and adjust the salt, sweetness, or acidity as needed.
- Let the jam cool before transferring it to a clean container.
