Hollow macaron shells have a large air pocket beneath the top crust instead of a full, tender interior. Although a small gap may not affect flavor, pronounced hollows can make the shells fragile and difficult to fill.

Common Causes of Hollow Shells

  • Unstable meringue: Under-whipped whites lack structure, while over-whipped whites can become dry and difficult to incorporate evenly.
  • Incorrect macaronage: Under-mixed batter may retain excessive air. Over-mixed batter can lose the structure needed to support the shell.
  • Baking temperature: Excessive heat can set and lift the outer crust before the interior cooks. Insufficient heat may leave the center underbaked.
  • Short baking time: Shells removed too early may collapse internally as they cool.
  • Uneven heat: Oven hot spots, unsuitable pans, or stacked baking sheets can produce inconsistent results.

How to Prevent Hollows

  1. Whip the egg whites until the meringue is glossy and holds firm peaks without appearing dry or clumpy.
  2. Fold the dry ingredients into the meringue until the batter flows slowly and settles back into itself.
  3. Pipe evenly sized shells and remove large trapped air bubbles by gently tapping the tray.
  4. Allow the piped shells to rest until their surfaces feel dry and no batter sticks to a lightly touched fingertip.
  5. Bake with an oven thermometer to confirm the actual temperature.
  6. Let the shells bake until their tops no longer shift when gently tested.
  7. Cool them completely before lifting them from the baking surface.

This can improve a small hollow, but it will not fully repair a severely empty shell.
