False Paella
This flexible, paella-inspired recipe is a practical way to use leftover cooked mussels and vegetables. Chorizo, chicken, or other ingredients may be added if available.
Ingredients
- 250–300 g leftover cooked mussels, removed from their shells
- Rice for 5 servings
- 1 onion
- 1.5 litres chicken stock
- 1 can crushed tomatoes
- 1 sachet paella seasoning
- Frozen peas, as available
- Frozen sliced carrots, as available
- Olive oil
- Salt and pepper
Method
- Peel and finely chop the onion.
- Heat a little olive oil in a casserole dish and sauté the onion.
- Add the rice and cook briefly, stirring constantly.
- Pour in the chicken stock, reduce the heat, and stir in the frozen peas and carrots. Season with salt and pepper.
- Cover and simmer until the rice is cooked, checking and stirring occasionally.
- Add the cooked mussels and crushed tomatoes.
- Mix well and warm gently until everything is heated through.
- Taste, adjust the seasoning, and serve.
