False Paella

This flexible, paella-inspired recipe is a practical way to use leftover cooked mussels and vegetables. Chorizo, chicken, or other ingredients may be added if available.

Ingredients

  • 250–300 g leftover cooked mussels, removed from their shells
  • Rice for 5 servings
  • 1 onion
  • 1.5 litres chicken stock
  • 1 can crushed tomatoes
  • 1 sachet paella seasoning
  • Frozen peas, as available
  • Frozen sliced carrots, as available
  • Olive oil
  • Salt and pepper

Method

  1. Peel and finely chop the onion.
  2. Heat a little olive oil in a casserole dish and sauté the onion.
  3. Add the rice and cook briefly, stirring constantly.
  4. Pour in the chicken stock, reduce the heat, and stir in the frozen peas and carrots. Season with salt and pepper.
  5. Cover and simmer until the rice is cooked, checking and stirring occasionally.
  6. Add the cooked mussels and crushed tomatoes.
  7. Mix well and warm gently until everything is heated through.
  8. Taste, adjust the seasoning, and serve.
